Problem and Solution
There is widespread misinformation surrounding gluten-free diets. This includes myths that celiac disease can be outgrown or that gluten-free diets are inherently healthy for individuals without gluten sensitivity. This course is an instructional solution for those seeking accurate, research-based guidance on managing a gluten-free lifestyle.

Process
In collaboration with a registered dietician, we began the process of identifying learning needs for the course on living a gluten-free lifestyle by discussing common challenges and misconceptions faced by individuals adopting a gluten-free diet. We conducted a needs analysis to determine key areas of focus, which include understanding the medical basis of gluten sensitivity, navigating food labeling, and addressing important knowledge about gluten-free diets.
